I suggest that you look at what's in 
OpenSim.Framework.Statistics.SimExtraStatsCollector and work backwards from 
there.  That code may only be collecting statistics from the first region 
(pretty brain dead eh, but I have never got round to improving it) but it should 
give you an idea of what's involved.
