I've been building Debian/Ubuntu .debs; you can find them here:

	http://pkg.knifejaw.com/ubuntu/dists/opensim/

They're not officialish (i.e. don't follow the Debian Policy Manual for things 
like file location) because OpenSim is not yet easily broken up in the way 
Debian packages generally are.  But I've been using them to run my own regions 
and grids for about a year now.
